Szchuan hot oil - Thu, Apr 2, 2020
Based on a recipe from Mike Chen
- 4 dl rapeseed oil
- 1-2 dl chili flakes / dried chili
- 2 tbsp sesame seeds
- 5 cloves of garlic
- 1 tbsp salt
- 3 tbsp szhuan pepper corn
- 1 stick of cinnamon
- 4 staranis
- 3 bayleafs
- 1 cardamom pod
- Sesame oil
- Chinese black vinegar
- Mix chili, salt, crushed garlic
- Heat oil and add szchuan pepper corn, staranis, cardemom, bayleafs and cinnamon
- Add the oil with the aromatics to the chili and garlic through a strainer so that only the oil hits the chilimix
Let the oil cool and enjoy!
