Szchuan hot oil - Thu, Apr 2, 2020

Based on a recipe from Mike Chen

  • 4 dl rapeseed oil
  • 1-2 dl chili flakes / dried chili
  • 2 tbsp sesame seeds
  • 5 cloves of garlic
  • 1 tbsp salt
  • 3 tbsp szhuan pepper corn
  • 1 stick of cinnamon
  • 4 staranis
  • 3 bayleafs
  • 1 cardamom pod
  • Sesame oil
  • Chinese black vinegar
  1. Mix chili, salt, crushed garlic
  2. Heat oil and add szchuan pepper corn, staranis, cardemom, bayleafs and cinnamon
  3. Add the oil with the aromatics to the chili and garlic through a strainer so that only the oil hits the chilimix

Let the oil cool and enjoy!
